Step 1: Cut the egg plant. |

Step 2: Powder some salt on each side and let it sit for 10 min. |
|

Step 3: Wash out (get off all the salt) and cover both sides with flour. |

Step 4: Fry and let it drain on a paper towel. |
|
Step 5: Drained: |

Step 6: The filling: grated cheese + egg + pepper + minced parsley. |
|

Step 7: Mix well, it will look like this. |

Step 8: Mix 3-4 tbs of flour with the rest of the eggs. |
|

Step 9: Now lets start to fill the wallet. |
|

Step 10: Like so: |

Step 11: Press the wallet well. |
|
|
Step 12: Put the wallet in the mixture (eggs and flour). |
|
|
Step 13: And roll it on bread crumbs. |
|
|
Step 14: Fry the wallets. |
|
